Chicken Freekeh Soup
Serves: 6
Cooking Time: 1 hour 30 minutes (90 minutes)
Ingredients
For the Chicken Broth:
• 3 lbs bone-in chicken pieces, chicken breasts, or boneless thighs
• 1 onion, peeled and halved
• 1 bay leaf
• 1 small Ziyad Brand cinnamon stick
• 3 Ziyad Brand cardamom pods
• 12 cups water
• Optional aromatics: like celery, carrots, etc.
For the Soup:
• 1 onion, chopped
• 2 carrots, peeled and diced (optional)
• 3 tbsp Sultan olive oil
• 16 oz (3 cups) Ziyad Brand freekeh, picked and washed
• 1 tsp Ziyad Brand 7 spice blend
• 1/2 tsp Ziyad Brand ground cardamom
• 1 tbsp sea salt
• 1/2 tsp Ziyad Brand black pepper
• 10-12 cups chicken stock or water
• 4 heaping cups cooked, shredded chicken

How to Prep Freekeh:
1️⃣ Since it’s an agricultural product, start by picking through the freekeh to remove any leftover shells or hulls.
2️⃣ Spread the freekeh on a large tray or plate and check for any bits to discard.
3️⃣ Rinse a few times, drain well before use
